ipe :
SW ED ISH M EAT BALLS
1 pound round steak.
cup chopped onions.
% cup g ra te d raw potatoes.
2 eggs.
'u pound lean pork.
1 tablesspoon butter.
2 cups milk.
S alt and pepper.
B u tte r, flour, beef s t o c k or
bouillion from cubes.
G rind the beef and pork very
fine, brow n the onions in the fat.
T h en com bine them w ith m eat,
potato es, milk, egg yolks and one
egg w hite. Season to ta s t w ith
a a lt and pepper. Mix and w ork
th e m ix tu re fifteen m inutes until
sm ooth. P u t in a covered bowl
in th e re frig e ra to r for two hours,
th e n shape into sm all balls.

sm ooth brown gravy in the pan
by adding beef stock or bouillion.
