PITA PIT Tacovore specializes in taking ingredients you wouldn’t think of putting in tacos and somehow making them delicious. Normal ingredients such as cauliflower or calamari are made unusual by taco-fying them. Throughout the winter, the menu makes a star of ingredients such as blood orange, which is used as a marinade as well as in a blood orange cocktail, and the new “it” ingredient, cauliflower. “We pickle the cauliflower instead of roasting it,” says Tacovore owner Steve Mertz. “We slice it and do a quick pickle with it.” That goes into their calamari taco. The Herbivore taco is always a showcase for seasonal ingredients, such as butternut squash, which in this case is served with Brussels sprouts, black beans, pickled red onions, cilantro, cotija cheese and roasted pepitas. Right now, citrus is big on the menu. “In the winter citrus comes through,” Mertz says. “That’s when we use oranges, satsumas, blood oranges and clementines, too. The carnitas taco (pork), which we always have, has citrus in it right now.
