Creativity in a cone or a dish CRESWELL BAKERY If you’ve ever thought that the picture-perfect ice cream scoops at Red Wagon Creamery deserved to be on the Food Network, you were right. And now they are. Film crews visited Red Wagon Creamery and their neighbors at Party Downtown on Saturday, Jan. 7, during the snow and ice storm. Diners were undeterred. “We had seats for 42 and 42 people showed,” says Red Wagon owner Stuart Phillips. The Red Wagon team revived Russian Meteorite, a winter favorite from the past. Imagine beets roasted in vodka with fudge swirls and malted milk balls. “It turns into this beautiful pink color,” Phillips says. “You get a nice earthy taste and then you add a 72-percent cacao chocolate for the chocolate flavor and a little bitterness. It’s a very nice way to use something that is still in season.” Another seasonal flavor happening right now is sweet potato casserole. Roasted sweet potatoes and candy cap mushrooms, for a slight maple flavor, are combined with toasted house-made marshmallow to give eaters the taste of the Thanksgiving table mainstay. “Root vegetables are still around in January and we definitely want to encourage farmers to keep growing these things,” Phillips says with a laugh. “We can’t just give them a market for corn and strawberries.
