Apples All Day
Annette Pershern of RiverBend Farm & Pleasant Hill
Orchard (river-bend-farm.com) works throughout the week,
then spends her Saturdays in the farm’s kitchen making
pies, jams, handpies and pasties for the farmstand and the
Dexter Lake Farmers Market.
When the produce starts to kick in, Pershern schedules
twice-monthly jam-making classes using the fruit on their
50-acre family farm. “We usually have about eight people in
each class,” she says. “I love to share knowledge and I love
what I do.”
Pershern’s parents bought the acreage in 1992. Her brother,
niece, nephew and her two daughters are helping manage things. “It
really is a family venture,” she says.
The farm grows hazelnuts, more than 25 varieties of apples, several varieties of pears, peaches
and several different types of cane berries along with vegetables such as zucchini, cucumbers
and more. They are working on making hard cider from their apples and getting a license to allow
for tastings.
Starting in September, a plethora of apples will be available for juicing, pies, sauces or just
for eating out of hand. Gravenstein apples, says Pershern, make a “phenomenal” pie and will be
ready for picking by mid-August. Pershern likes her pies on the tart side, and recommends a mix
of Braeburn and Jonagold apples. “Jonagold makes a sauce that you don’t even need to add
sugar to,” she says.
Come September, Empire apples will be available. An excellent eating apple that is juicy,
crunchy and sweet, it’s a cross between McIntosh and Red Delicious that can be stored for
months. Melrose is also excellent for baking and a good keeper, she says. Braeburn and Fuji get
picked late in the season and store well when kept chilled. Liberty is what Pershern recommends
as the classic “backyard tree.”
“They’re disease-resistant and a smaller size, so kids eat the whole apple,” she says.
All of these and other varieties of apples will be available for purchase from the farm, either as
fresh apples, juice, cider or prepared products such as pies, jams, jellies and butters. — Vanessa
