Take a page from Marché’s recipe book and make a Moroccan-spiced tomato jam. Chef Karl Zenk makes a tomato jam with onion, garlic, ginger, cinnamon, black pepper, saffron and a little honey. No need to seed the tomatoes first, especially if you use a sauce-type. Cook it all down and add a little tomato paste if it’s not quite thick enough. Freeze or can to have all winter long.
