Not that there’s anything wrong with those summer snacks, but typical is not part of the vocabulary of Tiffany Norton, Party Downtown’s chef and owner (along with her husband, Mark Kosmicki). Her twists on the preparation of these summer standbys add a new level of taste that can be enjoyed in many different ways. If you like sauerkraut, chances are you’ll like sour corn. Unlike cabbage, which releases water when mixed with salt to create its own brine for fermentation, sour corn must be tossed with a salt-water solution to get it going. Add your corn kernels to your fermenting vessel and pour about a quart of water with about 2 tablespoons of salt over it. Let it sit out until you like the flavor of it. Serve it as a relish. Another thing Norton is fond of doing with the abundance of Roma or other small summer tomatoes is roasting them. “Halve them and drizzle them with sea salt and olive oil and put them into a 300-degree oven for an hour and a half or so, so they’re half-dried,” Norton says. “It concentrates their flavor. You can put them in olive oil in the fridge or use them right away. Put them in grain salads or a charcuterie plate or with cheese.” Party Downtown is serving oven-dried tomatoes as a garnish along with feta on a rabbit kofta dish with cremini mushrooms. Think savory rather than sweet if you have stone fruit and you’ll level up flavor and uses. Turn peaches or nectarines into a chutney by chopping them up with garlic and vinegar, mustard seeds, fenugreek and sugar. “Simmer until it becomes kind of cohesive,” Norton says. “You can puree it and put it on things or leave it chunky.” This savory sauce makes an appearance on a pork belly vindaloo special, served with olive oil fried toast and pickled onion rings. — Vanessa Salvia 2690 Willamette St. 465-9038.
