Serving lunch & dinner, Chinese cuisine for stu- George says in Prohibition-era parlance, a speakeasy was considered more of a nightclub while a “blind pig” was more of a casual neighborhood bar, which is the feel he was going for. His ongoing remodeling is an attempt to bring back some of that early ambience, including stained glass above the bar. When the power went out last year, George set up candles and played old shellac records on a gramophone. The Blind Pig opens at 6:30 am seven days a week for breakfast service, and doesn’t close until 2:30 am. — Vanessa Salvia Pork Chop Sandwich FROM THE BLIND PIG According to Blind Pig owner Rick George, the pork chop sandwich is to his hometown of Butte, Montana, as the cheesesteak is to Philly. George moved to Eugene in 1982 and worked for years as a stagehand at the Hult Center. He missed his pork chop sandwiches from Butte, so he started making his own. “I’ve had friends from Montana say that mine are 100 times better than the sandwiches they got in Butte,” George says. “I even had a lady come here to try my sandwiches who used to work at the top pork chop sandwich place in Butte for 30 years, and she said mine are better.” Though the sandwich is called a “chop sandwich,” it’s actually made with a tenderloin. George also makes delicious smoked salmon chowder, made with salmon smoked in-house. George says he always wanted to have his own bar, and after getting out of the stagehand business he ran his own place before purchasing the Blind Pig six years ago. In a nod to the Prohibition era, the name refers to the practice of getting patrons into the drinking establishment through some sort of attraction. “They’d have a spotted chicken or a two-headed goat or a blind pig that people would want to see,” George explains. “So after people paid their admission to see the spectacle, they would get their complimentary beverage.” 1 pork tenderloin, sliced 1/2-inch thick 2 cups flour 2 teaspoons salt 2 eggs, beaten 1 1/2 cups beer oil for frying Pound pork to tenderize and to make the slice a uniform thickness. Combine batter ingredients and stir until well-blended. Coat pork thoroughly with batter. Deep fry at 350 degrees until golden brown. Drain on paper towel while assembling bun. Serve on a hamburger roll with onion, pickle, mustard and lettuce. George serves these sandwiches with yellow mustard, but offers hot Chinese mustard for those wanting a little more kick.
