WHAT’S HAPPENING When you hear the word “fermentation,” it’s likely your mind rushes to thoughts of beer, or perhaps — this being Eugene — kombucha. But the ancient process of fermentation, a metabolic action that converts sugar to gas, acid or alcohol, is used in the production of all sorts of stuff , including cheese, bread, mead and teas, all of which you can discover Saturday at the annual “Fun with Fermentation” Festival hosted by the Willamette Valley Sustainable Foods Alliance. Featuring a bevy of local vendors, including Agrarian Ales, Hop Valley Brewing, Independence Creamery and more, this yeasty fest off ers an educational (and edible) look at all things fermentable, including live demos on sauerkraut and miso.
