Seafood FROM PORCELLINO BISTRO Porcellino Bistro, one of the Eugene’s newest campus-area eateries, looks and sounds fancy, but you can fill yourself up with food that tastes like fine dining for $10 or less. “Most Italian food in Eugene is fine dining that is expensive,” says co-owner Evan Woodward. “Here we call it very casual, Italian-inspired, with good portions.” For the owners, Woodward, 26, and Cody Verkler, 27, Porcellino Bistro is their first foray into the restaurant world, though Verkler grew up around his family-owned La Petite Gourmet Bakery, and Woodward’s first job as a teenager was in a restaurant. Woodward now teaches culinary classes through the Network Charter School. Porcellino Bistro’s location was previously a string of laundromats and a tanning salon, so the kitchen space is limited. They have no hood fan, and for a start-up restaurant it’s incredibly expensive to have one installed, so that means they have no fryer. The bistro has been open since mid-January, and so far the response has been positive, Woodward says. They are making some small adjustments to provide their clientele with more comforts, such as small plates for smaller prices, and adding a vapor lounge after 9 pm with beer and wine. This slider recipe is a new addition to the menu that will be available for fall football tailgaters and game days. 1 tsp thyme 2 cloves garlic sliced thin 1 tbsp salt 1 tbsp sugar 1 medium red onion, cut into 1/8-inch circles PORK BELLY: 1 1/2 lbs pork belly 1 can of Coke salt PROSCIUTTO CHIP: 1 paper-thin slice of prosciutto for each slider Bake in a 400 degree oven for about 3 to 5 minutes or until the prosciutto is cooked and crispy but not burnt. Coat pork in salt and allow to dissolve into the belly. Braise the belly with the Coke in a covered pan on slow simmer until a fork can easily be inserted. Allow belly to cool. Slice half-inch pieces against the grain. PICKLED RED ONIONS: 1 cup distilled white vinegar 1 tsp oregano Mix first five ingredients into a saucepot and bring to a boil until the liquid looks brown. Pour the hot brine over the sliced red onion. Note: It may not look like enough brine but stir the onions every minute and they will cook down and submerge under the brine. Allow to completely cool in the refrigerator. SLIDER ASSEMBLY: Toast a slider bun and coat both sides with aioli or mayonnaise. Sear the pork belly on both sides in a hot pan until caramelized and top with sliced provolone to melt. Place seared belly with cheese on the bun. Top with arugula, pickled onions and prosciutto chip.
