Chef Mark Stern began his soup crusade in 1997 with a food cart called Carte Blanche Soup Carte. This was well before the era of the food cart craze, and his cart was successful enough that it is still dishing up soup, bread and salad in front of the PLC building on the UO campus. Now that he’s moved into a restaurant, he’s able to serve more than 80 soup varieties all year round. Stern makes all Soup Nation soups in-house, with no MSG, packaged stock bases or preservatives. He smokes his own meats in-house and roasts his own veggies for salads and sandwiches. Breads are baked fresh each morning, as are all of the baked sweets and savory items. As satisfying as soup is, Soup Nation also has locally roasted, organic drip coffee and espresso and an all-Oregon handcrafted beer selection. — Vanessa Salvia For the chicken: 1 whole fryer chicken water to cover 1 carrot, rough chop 2 ribs celery, rough chop 1 large yellow onion, rough chop 3 bay leaves 4 cloves garlic For the ground items: 1/2 cup chicken fat or olive oil 4 corn tortillas, cut into small pieces 1/2 cup walnuts 1/2 cup sesame seeds 1 1/2 cups raisins or currants For the sauté: 3 tbsp olive oil 1 large yellow onion, small dice 1 tbsp salt 4 cloves garlic, minced 2 tsp ground cumin 2 tsp oregano 1/2 tsp cinnamon For the liquids: 16 ounces crushed tomatillo chicken stock to cover 1/2 cup chile puree (Reconstituted mix of 5 to 7 types: guajillo, ancho, New Mexican, de arbol, pasilla, California or others.) 1 cup chile water 1/4 cup coffee, strong brewed For the fi nishing touches: 2 tbsp cilantro, minced 2 cups corn Juice of 1 fresh lime Cut chicken into pieces. Add it and the vegetable accompaniments to a stockpot. Bring to a boil. Reduce to simmer until the chicken is done. Pull out the chicken. Pick the bones off meat. Add bones back in and reduce the stock, fi nally straining to make stock. Sauté the ground items in olive oil or chicken fat until well toasted. Whirl in food processor until it becomes a paste. Reserve. Reconstitute chiles for puree, reserving 1 cup of the chile water. Brew coffee. Reserve. In another larger stock pot, cook the sautéed items until the onions are translucent. Add the ground items. Cook 5 minutes to integrate. Add liquids and enough stock to cover. Bring to simmer. Add poached chicken and fi nishing touches items. Adjust with more chiles and salt as needed. chow! WINTER 2014 11
