downtown, next to Voodoo Doughnuts,
in the site of the former Adam’s Place.
“The good Lord willing,” says Brendan,
“we hope to be a delightful, meaningful
long-term resident of a downtown that
is showing many signs of promise and
progress! Viva La Belly!”
BELLY TAQUERIA
TORTILLA SOUP
Serves 4
2 tbsp vegetable oil
4 garlic cloves, peeled
1 while onion sliced
2 dried pasilla chilis and
1 dried ancho, stemmed,
seeded and torn
6 Roma tomatoes, roughly
chopped
6 cups chicken stock
Salt to taste
6 oz queso fresco
1 avocado, sliced
1 lime, cut into wedges
1 cup or so tortilla chips,
crunched
Heat the oil in a medium-
sized sauce pan and add
garlic and onions; cook
until golden, about 7
minutes. Remove garlic
and onions, leaving oil,
and put them into blender.
Add chili pieces to the hot
pan. Turn quickly to toast
briefly; do not let them
blacken and burn, just
make them toasty and
fragrant. Then remove
chilies and turn off pan.
Add the tomatoes to the
blender and process
to a puree. Reheat the
saucepan, and then
add the tomato/garlic/
onion purée to it. Sizzle,
sizzle. Stir, reduce and
thicken to almost a paste,
concentrating the flavors.
Add the broth (and a
sprig of fresh epazote, if
you have it) and simmer
for 30 minutes. Taste
for salt. Garnish with
the avocado, chili pieces
and tortilla pieces,
(and cooked, shredded
chicken if you want to
make the soup more
substantial). Squeeze
with limes at the
table. Enjoy!

“Via mitosis, Belly has divided into
two, if I remember high school science
right,” says chef and owner Brendan
Mahaney. That original, adorable little
spot on 5th Avenue is now a full-time
taquería, informally known as Taco
Belly, formally known at Belly Taquería.
“This taquería germinated from our
Monday night taco nights that were
popular and fun,” says Brendan. “I have
enjoyed and appreciated Mexican food
since my cheffing days at Red Agave
and a six-month stay in Baja. I love me
a taco, the straightforward bright and
deep flavors, the masterful uses of
dried chilies, the kick-back, keep-it-
real, keep-it-enjoyable atmosphere of a
good taquería.”
