Pear Crumble Pie FROM RIVER BEND FARM & PLEASANT HILL ORCHARD River Bend Farm is a family farm with three generations of Annette Pershern’s family living on it. The farm is open by the third week of May to gear up for strawberry season. A farm store offers not only items grown there but also items made in the community, such as honey, quilts, soaps, jewelry, cards and paintings. River Bend also carries its own hazelnuts, local goat milk and cow milk cheeses, Biancalana pork and Northern Lights Christmas Tree Farm grass- fed beef. Last year, Annette began offering jam- making and canning classes in their certified kitchen. “I offer my customers a place for them to relax, enjoy a farm setting, get fresh-picked, healthy fruits and veggies, and give them a sense of community,” Annette says. “I am going to offer a lot more classes this upcoming season using the fruits from our farm! The jam- making classes were a real hit, and I will also be teaching classes where my customers can go and pick some of the veggies, prep them and then can them!” The following recipe for Pear Crumble Pie is one that Annette makes using pears grown on the farm. Summer 2012 PEAR CRUMBLE PIE 6 d’Anjou pears juice of 1 lemon 1 tsp cinnamon 1/4 cup unbleached flour (this is your thickener) For the crust: 4 1/2 cups unbleached flour 1 tsp salt 1 cup Crisco shortening 1 cup ice cold water For the topping: 1 cup unbleached flour 1 cup sugar 1 stick butter Peel and cut pears into slices and put in medium-sized bowl. Add lemon juice, cinnamon and flour and stir thoroughly. Set aside. Prepare pie crust: Cut in shortening to salt and flour mixture in medium bowl. Add and stir in water (DO NOT over-mix).
