THE FRESHMOBILE Sammitch and sandwiches hit the road BY HAILEY CHAMBERLAIN W hen you first see KC Brooks, you might do a double take: He’s as fresh, stylish and brightly colored as the food cart he’s named Sammitch. The very health-conscious Brooks stocks his cart with organic produce from Living Earth Farm, when it’s avail- able, and he uses herbs, lettuce and arugula from his own garden. Many of Brooks’ trademark recipes, including the tuna melt and his ever-popular Orgasmitch (half meatloaf, half bacon), are straight from his mother’s cookbook. Sammitch also features a Stop-and-Go Chicken Burger with red and green peppers, a Vegan Bean-In Burger and deep-fried Oreos, Nutter Butters and carrots. One of the tastiest sandwiches on the Sammitch menu is the Turkey Gobbler. The perfect embodiment of Thanksgiving, the Turkey Gobbler’s patty is ground turkey mixed with onions, mush- rooms, celery, cranberries and stovetop stuffing served on whole- wheat bread and open to an array of sauces handcrafted by Brooks himself. We recommend the cran-mayo or pesto presto. While Sammitch is already thriving, Brooks is especially excited about his latest expansion project: making Sammitch mobile via a new food truck. “The coolest, baddest, most colorful spectacular truck you see in Eugene, period,” Brooks calls it. “It’s going to spark a lot of people’s imaginations and I’m really excited about it.” Brooks says the mobile Sammitch truck will feature everything from “sandwiches to full-on crazy soups.” Offering paninis, Spanish bocadillos, po’ boys, Vietnamese sandwiches, falafel sandwiches, smoothies and, of course, all of the Sammitch classics, Brooks says his mobile Sammitch food truck will be the answer to a market “that nobody is capitalizing on.” Brooks needs location tips, though.
