NOLI’S Bolognese Sauce yields 1.5 gal 2.5 lb ground beef 2.5 lb ground pork 1 cup olive oil 2 large carrots finely chopped 4 celery stalks finely chopped 2 yellow onions finely chopped 1/2 cup chopped garlic 1 cup dry red wine, possibly Chianti 2 tbsp dry herbs (sage, rosemary, oregano) 1/2 cup chopped fresh basil 1 lb tomato paste 3 lb crushed tomatoes salt and fresh ground pepper to taste In a large saucepan combine olive oil, carrots, celery and onion and cook gently for about 10 minutes. Add garlic and after few minutes add meats and seasoning. When meat is ready (about 20 minutes) add wine and reduce liquid for few minutes. Add tomato paste, crushed tomatoes and fresh basil; simmer over very low heat for at least 1 hour. When sauce is ready, toss with any variety of fresh or dry pasta.
