2 tbsps pickling spice
1 cup apple cider vinegar
6-20 habaneros diced (how hot do you want it?)
11/2 quarts pineapple juice
2 cups apple juice
In a heavy bottom pot on medium-high heat, toast pickling
spice until it starts poppin’ and dancin.’ Add vinegar,
stand back and wait for the boiling to settle down. Add the
habaneros and boil for a minute. Add the pineapple and
apple juice. Boil long enough to reduce by half, strain out
the solids through a fine sieve, cool and enjoy.
