JONES Host Correspondent From summer until as late as Thanksgiving, for those in the know, there is blue gold that grows on bushes in the high country of M t Hood This blue gold is huckleberries. A Wemme resident and his wife get through the lean winter months with about a dozen or so gallons of huckleberries Patiently they’ll w ait out the winter snows and the spring rains, feasting on huckleberry pies, dried huckleberries, h u c k le b e r r y ja m and huckleberry pancakes, un til the summ er sun ripens the next crop This season was like all the others It was like a tradition he has partaken of since 1945 Brooking Gex, 70. emersed himself in the secret h u c kleb erry fields of M t Hood He hit the woods and picked from the time the berries first ripened until the icy winds and the snow drove him back down to the lower elevations, where he would to seek out what huckleber ries may still be good for picking Like they were blue gold that grew on bushes in the high country. Gex takes a fam iliar course to lush pat ches of huckleberries on “ No-tell-um " T ra il just off “ N o -te ll-u m ” R o ad . C au tio u s, he s a id , he always makes sure that he is not followed by those wishing to learn of the loca tion of some of the best huckleberries the moun tain has to offer. “ I t ’s unfortunate that it has to be this way, but if you let everyone know of th e good h u c k le b e r ry fields, it ’ll be just like that good fishing hole you use to have." said Brooking. “ I t ’ll soon be all fished out.” If too many people in q u ire about " a ll those wonderful huckleberries” he has been picking, he said he'll take a detour to make sure his route cannot be easily followed But once safely isolated in the same rugged areas where Indians had come each y e a r since p re h is to ric times to pick berries, he says he relaxes and is at home Rarely, he said, does he see another human being who is seeking out the treasured berries G eneral ly, if he sees anything it w ill be some species of w ildlife He said it not unusual for him to come across a deer, an elk. a coyote, a bob cat, a cougar or a bear Other than that, he is left comfortably alone to pick to his heart’s con tent After years of staining his a g ile fin g ers w ith huckleberry juice, Gex ad mits that the tim e may soon be here when he may no longer be able to make his excursions into the picking fields Habitat for huckleberries are quickly vanishing due to the forests encroaching on the fields Gex blames improper management of the forests as a m ajor factor con tributing to the decline of the berry fields. "Foresters are more con cerned about producing m arketab le tim b er, not g o w in g w ild huckleberries," said Gex. “ Can you imagine what would of happened to the Indians of North America if they had let this happened to them? D A TE BARS 1 Lb dates, coarsely cut 1 cup walnuts, chopped >4 cup flour V4 teaspoon baking powder V« teaspoon salt 1 cup sugar 2 eggs V« cup melted shortening Pit dates and quarter M ix d ry in g r e d ie n ts together Add dates and nuts to flour m ixture. Beat eggs: add melted butter. Com bine m ix tu re s and bake in 8” x l2 " pan. Bake at 350’ for 30 minutes. This is a chewy cookie and not too sweet, delicious! The fo llo w in g recip e makes a quick nutritious candy that is very tasty. C A NDY BALLS 2 cups powdered m ilk 1 cup peanut butter 1 cup honey Crushed graham crackers M ix together, pinch off and form into balls. Rolls balls in crushed graham c ra c k e rs ; set in refrigerator until firm — From the files of Juanita E arl, Portland. D IV IN E H A W A IIA N D IV IN IT Y CANDY Combine in a saucepan: 3 cups white sugar *4 cup Karo syrup 44 cup water Boil until m ixture spins a thread. (265" F ). Mean while beat 3 egg whites un til stiff. Slowly add syrup to egg whites, beat in con s ta n tly . When m ix tu re th ic k e n s a d d V« cup Hawaiian Punch Concen trate and 1 */i-2 cups flaked coconut or nuts. Beat until stiff. Drop by spoonfuls on w a x p a p e r. M a k e s 2 pounds. Stir 1 1/3 cups flaked coconut in skillet with 4 cup m argarine until light brown. Add: CHOCO-NUT DESSERT M e lt 1 cup (6 o z .) chocolate chips in 1 (13 oz.) can evaporated m ilk Boil gently, stirring constantly for two minutes, Add 1 cup (10 or 10‘* oz.) pkg. m a r s h m a llo w s . S t ir u n til melted. Cool. 3 cups rice Krispies, crush ed 1 cup chopped nuts. Mix thoroughly. Vj gallon brick ice cream, (b u tte r b rick ie , almond crunch, or your favorite flavor.) S p re a d o n e -th ird of cereal m ixture in bottom of 9 " x l3 ” pan Cut ice cream in half, then cut each half into 12 slices Lay 12 slices over cereal.
