those seedlings from the
D L Phipps State Forest

Shrimp Sunomono <Japanese-stvle salad*
6 ounces tiny Pacific shrimp
*2 cup white vinegar
1 tbsp sesame oil
* 2 cup sugar
2 tsps salt
1 tsp monosodium glutamate
1 cucumber, thinly sliced
3 stalks celery, diagonally sliced
2 green onions, minced
Rinse shrimp with cold water, pa, dry with paper
towels Set aside Combine vinegar, sesame oil. sugar,
salt and nionosodiuin glutamate, mix well Refrigerate
dressing for at leas, one hour before serving to allow
flavors to blend Combine shrimp, cucumber, celery and
green onion Pour dressing over shrimp and vegetable
mixture just before serving and toss
Makes four servings i For a light summer entree, in­
crease shrimp to one pound*

more than 10 persons in the
production of lumber and be

2 cups fresh corn kernels (about lour ears)

until March 31, 1962.
1 cup chopped celery
3 green onions, chopped
curry powder to taste
mayonnaise to moisten
sal, and pepper to taste
Rinse shrimp with cold water and pat dry with paper
towels Refrigerate shrimp Cut corn away from cob with
sharp knife Transfer corn to medium saucepan; sprinkle
with dash or two of salt Add enough water to cover corn
Cover and bring to boil Reduce heat and simmer for two
or three minutes, or until just tender Drain and rinse with
cold water immediately Cool.
Combine all remaining ingredients Refrigerate for at
least one hour before serving to allow flavors to blend
Open-Faced Shrimp Sandwich
2 cups tiny Pacific shrimp
4 cups hard cooked eggs, peeled
1« tsp salt
1-8 tsp pepper
1« tsp dry mustard
1 tsp minced green onion tops
1 raw egg yolk
l 4 cup heavy cream
8 slices whole wheat bread
1 cup grated sharp Cheddar cheese
paprika
Rinse shrimp, dry and set aside Separate hard cooked
egg yolks from whites; set whites aside In small bowl,
mash hard-cooked egg yolks, blend in salt, pepper,
mustard and green onion Stir in raw egg yolk and cream
Chop hard-cooked egg whites Add egg whites and shrimp
to yolk mixture
Toast bread on one side only Spread sandw ich mixture
;on untoasted side of bread Top with grated cheese and
sprinkle with paprika Bake at 375 degrees for 10 to 12
minutes or until cheese is lightly browned
Serve open faced Makes four to six servings
