Cheesy Chicken and Vegetable Soup 1 head cauliflower, separated 1 pound broccoli, cut 4-6 stalks celery, diced 1 onion, diced ½ pound carrots, diced 1 pound sliced cheese 1 stick of butter, halved 1 14-ounce can chunk chicken ¼ cup vegetable base 2 cups milk 2 tablespoons flour Salt and pepper 1 teaspoon marjoram Red pepper flakes to taste 1. Put cauliflower and broccoli in a pot with 3-4 cups of salted water and cook on high. When it starts to boil, add the vegetable base. 2. Melt ½ stick of butter in a pot and add the onion, celery and carrots with some salt. Cook until the onion is transparent and the carrots are getting soft. 3. Add this to the cauliflower and broccoli; simmer until cauliflower and broccoli are soft. 4. Melt the other ½ stick of butter in the same pan used to sauté the veggies. When the butter has melted, add the flour, salt and pepper to make a rue. Stir it until the butter and flour are browned. Add the 2 cups of milk slowly and stir with a whisk until the mixture is smooth. Start adding the cheese slices while stirring the mixture with a spoon. 5. When the cheese sauce is smooth, pour it in with the veggies and stir in the can of chicken chunks. Heat through and serve. 6. As an afterthought, I added a can of spinach, drained. So good!
