Strong to be featured in publication on Native cuisine By Teresa Simmons, Community Rela tions Manager at Chinook Winds Recently, Chinook Winds had a visit from Tristan Reader and Terrol Johnson from Tohono O’odham Community Action (TOC A) based in Arizona. TOC A is a community-based organization dedi cated to creating a healthy, sustainable and culturally vital community for the Tohono O'odham Nation. They came to interview Chinook Winds Executive Chef and Siletz Tribal member Jack Strong on his use of tra ditional foods in modem cuisine at the casino’s restaurants for a new magazine that soon will be in publication. If you look up TOCA on the Internet, you will find a program developed over a 15-year history. Culture, health, agricul ture and a sense of pride all work hand- in-hand with youth and Elders combining efforts to nurture and rebuild a lifeway known to generations past, to hand on to the generations yet to come. They are truly incorporating that which was lost into the new and modem way of life. From a small grant, TOCA has developed into a multi-program organiza tion promoting traditional foods. One of TOCA’s initiatives is in the local schools, where indigenous foods are incorporated into the school lunch program. TOCA has two farms (one operated traditionally) and one restaurant. Jack did a lengthy interview identi fying the native foods indigenous to the Oregon Coast and invited Tristan and Ter rol into the kitchen of Chinook’s Seafood Grill so they could watch the preparation and take photos. Some of Jack’s taste sensations, which are beautiful as well as delicious, were sampled during the interview (there was a lot of “mmmmmm, you’ve got to taste this” and “what is that luscious flavor?” going on). They also received a tour of the casino and a brief history of the Confederated Tribes of Siletz Indians. We’ll keep you posted on when the article is published.
