Bread pudding isn’t exactly a glamor dessert, especially as served at many a table, but there are wonderful recipes that when served always Invoke quick de mands for "seconds". Good, nourl .hlng and hearty is this de luxe bread pudding job, as pre pared for G. Combine 2 c. scalded milk. 2 tbsp, melted butter, and one c. stale bread cut In Ji-inch cubes in greased baking dish. Add Ji c. sugar ’A tsp. salt, Ji tsp. va nilla, Ji tsp. almond extract to 2 eggs; beat slightly. Add to milk mixture; stir in one c. coconut, shredded, toasted. To toast shredded coconut, spread In tliin layer in pan or baking sheet. Place under broiler or in 400 F. Toast until coconut Is golden brown, stirring fre quently. Take care it does not burn. Serve hot with butterscotch sauce, or cold wltii cream. Delicious either way. A good, dellcately-splced baked custard Is an excellent choice when one has to cater to an In valid, an old person or youngsters. And now that eggs have come down, a custard Isn't such an ex travagance as it was but a short while back. Scald quart milk; add 2 heaping tsp. Instant coffee, and stir well. Cool slightly. Add J4 c. sugar, Ji tsp. vanilla and Ji tsp. each salt and nutmeg to 4 eggs (or 3 yolks) slightly beaten. Add hot milk gradually, stirring con stantly. Turn into well-buttered baking dish.
