GOOD COOKING RECIPES Mince Meat Four pounds lean beef, eight pounds apples, one and one half pounds suet, four pounds raisins, two pounds cur rents, two tablespoonsful cloves, four table spoons cinnaman, two tablespoonsful salt, one half gal lon cider, four pounds sugar, light brown, citron, orange and lemon peel, one cup jelly, and orandy. Mock Duck Score an inch thick round steak with a sharp knife. Prepare a stuffing as for chicken and spread over the steak; fold it over and tie or skewer in place. Put in a drip ping pan, lay over it a few slices of salt pork and bake forty-five minutes. Chilli Sauce-Take twenty large ripe tomatoes, four white onions, three green peppers, four table spoons salt, one of cinnamon, half tablespoonful of ground cloves and allspice mixed, a tea spoonful of sugar with a pint and a half of vinegar; peel tomatoes, chop onions fine, add spice, vine gar, salt and sugar. Set over the fire and let boil slowly for three hours. Bottle and seal. t Catsup -Cook tomatoes, put through colander and sieve quart vinegar to one-half bushel toma toes.
