All of the work Is done by time and temperatures dough mixing, bak ing, etc., all being regulated by the clock. Kix minutes are required for -the next step, the mixing, and the dough then goes Into steel troughs to mature, which takes about five hours. The dough Is then wheeled Into a nearby room where each loaf la scaled In exactly the same proportions. Then It is carried to the molding machines and then to the pans. After going Into tho proofs, the dough la placed In the ovens, where 80 minutes are re quired for tht baking. The bread goes through wrapping machines as the final step before being ready for public uae. Harris.
