Mushrooms can bo added for savor although they are not necessary. Tender uncooked dandelion leaves are combined with cottage cheese, nuts and mayonnaise to make the sandwiches. linked Carrots Kour meuiuml-slsed carrots, 1 dessertspoon sugar, 4 tablespoons butter, tablespoons flour, V4 cup cream, 2 teaspoons lemon Juice, yolks 2 eggs. H teaspoon salt, H teaspoon pepper, buttered crumbs. Wash and scrape carrots and cut In half-inch dice. Put Into a casserole with sugar and one ta blespoon butter, and add boiling w-uter to rover. Cover and bake about 30 minutes. Drain, reserv ing the lliiuor. Melt butter, stir In flour and slowly add one cup ear. rot liquor andjeream. Cook, stir ring constantly until thick and smooth. Stir In lemon Juice and yolks of eggs well beaten. Season with salt und pepper and pour over carrots In casserole. Sprinkle with buttered crumbs and put Into a moderately hot oven to make thoroughly hot nnd to brown crumbs. Serve from casserole.
