Scrub heels and cook in boiling water for 20 minutes. Drain dip into cold water and slip skins. Cut tn small "pieces and cook tn boiling water to cover 'until very tender. Itub through n sieve. There should be 'i1 cups of beet puree. Jceheat to the boiling point and stir in gelatine soaked in four tablespoons cold water for ten minutes. Ue move at once front the fire and stir until gelatine Is dissolved. Ad lemon Juice, salt und sugar. Turn into tiny individual molds and let stand several hours until chilled and firm. Wash celery anil cut. Let stand in lee water two or three houiH. Iry between towels when wanted. I'nmoUl beet jelly on a bed "uf lettuce carefully washed and crisped.
