Two hunches asparagus, 1 table
spoon' granulated gelatine. lA cup
cold water. 2 cups veal or chicken
broth, 1 tablespoon minced carrot,
1 lablespoon minced celery, 1 slice
onion, Vs teaspoon salt. 3 sprigs
parsley, 2 teaspoons sugar, 2 tab
lespoons lemon Juice.
Wush and scrape asparagus nnd
cook until tender. Tool. Add car
rot, celery, onion. Bait, sugar and
parsley to meat broth and simmer

cheese cloth, reheat, and add gela
