Melt 2 table spoons butter ami cook mush rooms over a low fire for fi e minutes. Add sweetbread. Mll' remaining butter, stir in flour and, slowly add milk, stirring constam-1 ly. When t hick and smooth add , suit and pepper and ndd to in is'i-, room n ikI sweetbread mixture.; Mix well imd add bread crumbs! and paprika. Hemove from fire nnd add yolk a of eges well beaten. Fold in whites of eggs beaten un-l til stiff mid dry. Half fill but tered custard clips or timb.ile molds wllh mixture.
