Two cups rhubarb, 1 cup diced strawberries. cup sugar, Mj cup fine dried bread crumbs, t table- spoon flour.. The, rhubarb should be cut into one-Inch pieces before nit amiring. Line u deep pie plate with a plain paste.. Sprinkle evenly over the crust two tablespoons suga r and the flour well mixed. Adtl one cup rhubarb and one-half cup si ravv berrles. Mix remaining sugar ami bread crumbs and sprinkle half ot it over Ilie layer of fruit. Add re maining fruit and sprinkle with re maining sugar and crumbs. Cover with top crust and bake from SO to 40 minutes In a moderate oven. lie sure the upper crust Is press ed firmly over the lower one to pre vent Iho escape of Juice, Moisten the under edge well before fitting over the lop. An indigestible but. "nummy" dessert is made if this pie Is served I with whipped cream. Mr. Waltz is an Oregon pioneer. He is a minister and at Christmas time he preached in Ikiker from the (same text and at tin.1 same church as he did in that city fifty years ago. News editor's note. OIR FAVOR mo JAM The housewife who has not had good rusiilts in making M ru wherry Jam, will welcome this hint which insures perfect success. The strawberry is lacking in pectin, the really active constituent in makins Jelly and jam "jell," Although syrup, which always con tains sugar, and fruit acid play an Important part, it Is this necessary "pectin" subKtance which Is ac countable for the failures. Kipe, meaty strawberries make a good Jam, but overripe berries which are usually used because they are cheaper, have more water content than, the iea ripe berries and ' Fcqiii re'' additional pectin to bring about the desired consist ency. Some housewares add addi tional sugar when confronted with this problem and while it does help to make the jam thicker, it also makes it sicken ingly sweet and ha-s a tendency to make the Jam become crystallized when exposed to the atmospliere. In making strawberry jam the berries should be washed well af ter they are hulled and allowed to drain thoroughly in an enameled sieve or colander. Measure the berries and put berries Into an enameled ware pre serving: kettle, the vitreous sur face of which wiil preserve the delicate color of Ihe berries, odd a cupful of granulated sugar for each cupful of fruit and let stand an hour lo draw Juice. Then allow to simmer for ten or fifteen minutes before boiling. Uoii forty minutes and stir constantly, and then gradually add concentrated home made pectin or that which is now sold In small bottles, until the de sired thickness of the Jam Is ob tained.
