Wash spinach through many waters. I'se warm water for the first washing and - cold for the remaining cleansing. Shake mil each handful of leaves when clean, but do not iliain. Put into u large kettle with a close-fit l ing co ver and plac over a slow fire. When the spinach is wilted increase the heal and cook for 20 minutes. If there is too much juice lo poss ibly use on the spinach. remove cover nnd let the water evaporate during the last five or ten minutes of cooking. I'hop spinach when tender, season with butler, .ill and pepper and arrange on toasl, using the Ihiuid as well as the ve getable. Prop a poached egg on eacli portion. Sprinkle eu'eb egg wiih salt and paprika and dot wbh butter. , Crisp pieces of broiled bacon can be served with this dish If de sired.
