One pound veal steak, -i cup
rtour, 1 scout teaspoon salt, 1 shoe
cnion, teaspoon pepper. - cup i
boilltiR water, mashed potatoes.
I rltn veal carefully and cut into
small pieces. Mix flour and salt
and roll meat in mixture. Melt but
ler and lard in a hot frying pun.
Add slice of onion and prepared
meat. Brown meat uuickly on both
sides. Remove onion ami add botl
jiik water, ('over closely and cook
one hour over a low fire or in a
moderate oven. Itemove meat from
wravy and chop incut very finely,
t omblne with the gravy. Arrange
meat and gravy mixture in rame-
iins and cover with well -seasoned
and u ell -beaten hot mashed po
tatoes. Don't spread the potatoes
smoothly over the meat, rather
drop lightly from the spoon. Put
into a hot oven to brown potatoes
and reheat meat.
