Melt butter and odd flour, stir

and milk last. Serve hot. This
amount serves four people.

Make coarse crumbs of stale bread
and place a layer on the bottom of
baking dish. Place on top of this
a layer of half the sliced apples
and sprinkle with one-half of the
sugar, to which has been added
the nutmeg and cinnamon. Dot
with butter, sprinkle with another
layer of crumbs, add the remain
ing apples, sugar and spices and
dot again with butter. Cover with
remaining crumbs and dote with
the remaining butter. Pour over
this the wuter, lemon juice, and
the grated lemon rind. Hake in a!
moderate oven about 45 minutes,
covering dish for the first half of
the time and removing covi-r for
the latter part of the buklng. Herve
with cream, lemon juice or hard
sauce. The quantity of water nec -
esury depends on dryness of the
rrurrwis and juiciness of the up -
pies.

Select six green sweet peppers
of uniform size, cover with boiling
water and let stand for fifteen
minutes. Then pull off as much of
(he thin skin as possible. Cut a
slice from the top of each and re
move the seeds and veins. Santo
a cupful of , sliced mush rooms In
three tahlcspoonfuls of butter for
five minutes. Add two on p mis of
bread crumbs, and cook them un
til they are brown. Then stir In
one end one-half cnpfuls of med
ium white sauce, two. hard-boiled
epRs, chopped, and season with a
teaspoonful of salt one elehth tea-
spoonful of pepper and a dash of
oaprlka or Cayenne pepper. Iet
boll for a few minutes and then fill
"he peppers with this mixture nnd
arrange them In nn enameled ware
baking dish. Bake in a hot oven
for fifteen minutes bailing . occa
donnlly with a few tablespoonfuls
-.f boiling wa.er and a tablespoon-
ful of melted butter.
As ,'hese should be handled care-
fully after they are baked, so as
