(AP) Scarc ity of shad found along the south Atlantic coast, ns compared with the numbers caught in former years, is causing apprehension In the minds of members of the boards of fisheries of various southeastern states, it was stated in the annual report of the South Carolina board to the stnte legis lature. While in 1!)07 rtHhermcn olong the const of this state caught 110, 000 shad, this year the catch amounted to only t5.2S0 and 25, 000 of these were caught several miles at sen. Many methods of replenishing the species have been tried, among which are fish hatcheries, pan smelting and time limits upon the shad season. Hints for the Housewife TRY THIS BUTTERSCOTCH iiAYKR PIR This pie differs from the ordin ary kind, In that It Is made up like cake. Carmellze one quarter of a cup of granulated sugar in an enam eled ware saucepan, over n slow fire. Watch carefully andatlr bo that U does not "catch." Cream together one quarter cupful butter ml one third cuplul flour. Add one cupful brown ftugar. three eg yolkB, well beaten, anil one-half teaspoon ful Bait. Add two cup- puis hot milk and the carmellzed sugar. Place In an enamalcd ware double boiler which will Insure the delicate color and flavor of thle creamy filling. Stir constantly un til thickened. Cut three rounds about a quar ter of on Inch thick of a flaky pastry to fit the potlom of ihe pin- plate and prick well with a fork. Hake in a hot even until delicately browned. When the pantry and filling are cool put the pie together like a layer eake with filling on top also. Cover with a meringue made of the three egg whites beaten with six tablerpoonfuls of powdered sugar. Hrown slightly in a moderate oven. riFXiciors cAnnAfJE itorrs Vegetables are being used tn very appetizing ways nowadays, and cabbage, ton, has such pos sibilities. Am. us cold cooked meat is employed the housewife will find It n very adaptable, dish for utilising the leftovers of a ro:.tt. chop one cupful cold meat, one medium si red onion, one green pepper, and add two cupruls of mashed potatoes. Season with sage and celery salt and shape the 1 xture Into small rolls. Poll er't of these In a cabbage leaf (wilted by placing In boiling wnt cr for five minutes) and place them in an enameled ware bok fng dish. Add sufficient boiling water or stock to cover them about half. Rake for forty-five minutes, or until the cabbage leaves are tender. These cabbage rolls should b handled carefully and gently while serving so that thlr appearance Is not marred. The enameled ware baking dish Is especially suitable because ft is so china -like and dainty tn ap pearance that it can be brought to ttip table and itsf-d as a serv ing dish. F'-h-ct a pouml nnl a h.iir of The hand given In' the last urtl- cle us one on which no good players oeeined to aree as to tin . 1 proper bid, is as follows: : A Hearts A Clubs 3. 7. 6. 5. S, 2 Diamonds A. 8, 7, 2 Spades ,A, 2. No -score, rubber game, What should Z as dealer bid with the foregoing .hand? Four different bids . huve been suggested uh proper with this hand. First: Ope no-trump on the ground that three aces always Justify a no trump. . That is usually correct but In tiila case no-trump would be a bad bid because of thn dis tribution. The singleton uce of hearts is a weak spot nnd the fact that the long suit nf clubs Is only nine spot, high Is another. For these reasons, the writer considers no-trump bid with this hand Iff Incorrect.. Second: No. bid on'lb"re was a . net -up heart suit Hie ground that the hand does ! against htm. Here again the take not contain a justifiable no-trump or svit bid and therefore should be passed nnd the club suit bid on the second round of bidding. A pass or no-bltl with this hand seems Inadvisable. The hand con tains three aces and Is loo strong, to pass without risk of misinform ing partmr. Third: One club on the ground that the three aces are compensatory cards and more than make up for lack of tricks In the, club suit. This is un doubtedly -true If the hand -1m played at clubs but If mil, part ner Is certain to be deceived by the club hid and will lead lhat suit with the chances of losing one or more tricks by doing so. In making nn original hid with out top eardsjn the suit bid, nl- 1 ways try ti imagine what will happen if partner opens that suit. It Is always better to bid such suits on tho second round of bid ding and then you will not de ceive partner nnd force him to open the wrong suit. Fourth: One diamond on the ground that.lt is u sound bid and In no way de ceives partner. By bidding one diamond you ore almost certain to get another chance to bid ami t hen you should bid clubs. This bid seems to the writer to be the correct one with tills hand nnd the one that will eventually pro duce the best results. It Is a very interesting Imnd and will undoubtedly cause a wide variety of opinions even after .this analy sis. Hand No. I. ' Hearts .1. 10, s, 2 -Clubs J, 7. 3 . . , I Hamnnds !i, 5 . Spades- K, C. 5 ' ' i A No scorn, first game, 7. dealt, bid o ii n no-trump and A p ssc d . What should Y now bid with the foregoing hand? In the opinion of the writer, Y should bid two hearts. It Is a hand thnt offers! no help for the nt-trump bid and hns much better defensive value at the heart bid than at no-trump. With a weak hand of this type, shoulder of lamb nr vent nnd have It cut In convenient pieces for serv ing. A opena the king of dfa nioiuis and all follow suit. - He then leads the Irey of spades, How should Z play the hand so that he can make game no mat tr how the remaining cards are dlRtrltntcd? Z should play the ace of spades for if R has the king and the hearts to do dropj lie can lone game. After playing the aco of spades. Z should lead trumps, winning the first trick: wllh the queen of clubs In his own hand, lie should then lend; a diamond and trump with 1 he nine of clubs In Y's hand, lie should then lead another trump! winning wil h the king of clubs in his own hand and lead the last diamond, trumping In Y's band with the ten of clubs. If the trumps are all out, ho should lend the hearts, h:it If not, he should lead another round of trumps and then the heart suit. Tf thn hearts are divided In the I two hands, he goes game without' any' trouble but If not, after , the second lead of hearts, ho should lead the spades. Now, no matter, whteh opponent has the king, he1 must go game. If tho opponent1 who has the heart suit wins the1 trie!;, he must lead away from his jack of hearts and thus he! enables Z to win four tricks In! that suit. If the opponent who has no hearts wins thn trick, he nvjfit lead either n spndo or n diamond ami as neither 'A'n nor Y's hend has a card of either suit, ono hand can trump and the oth er discard a losing heart. In either ense, therefore, Y-Z win the game. It Is an Interesting j hand nnd should be studied by dealing out the remaining twenty- ''six cards to A and I) nnd see how it works out. by tho surface of tho enameled ware utensil, which Is impervious to the action of fruit, acids.
