Sprinkle with salt and pepper, dredge with flour and saute in hot salt pork fat, turning often to brown evenly Remove to a stew pan and cover with tomato sauce; then al- low to simmer slowly until tho chick-1 en is tender. Add one-half can of mushrooms cut in thin slices and con tinue cooking 5 minutes. Place the chicken on a hot platter and surround with the sauce. Garnish with sprigs of parsly. Serve with rice cro quettes. A Quick Dessert Take a loaf of sponge cake if it is a trifle stale that does not matter and cut one rather thick slice for each person to be served. Arrange a slice on each dessert plate. Take a jar of per3erved strawberries and put a part or all of it into a sauce pan the quantity must be decided by the number of persons to be served and add to it enough cold water to make it pour easily. Heat but do not allow it to boil when ready to put the dessert on the table cover each piece of cake with the sauce. If desired, this might be thickened slightly with a little flour. Any kind of preserved fruit might be substi tuted for the strawberries: cherries would be particularly good. Chicken Lonf, With Spiced Jelly Dress and remove the meat from the bones of a Bpound fowl. Add - 1-2 pounds of lean veal and 1 pound of fresh pork with some fat. Pass through the meat chopper twice. Add 6 soda crackers rolled fine, 2 well beaten eggs, 2 finely choped primen tos, 1 cup of pecan nut meats broken into bits; then season well with salt and black pepper. Moisten with cream sauce or Bechamel sauce and add 1-4 teaspoon of maco. With the hands mix well and shape into an oblong loaf. Arrange in a dripping pan Market Place FOR SALE Farm Lands. Most all of the farmers started heading the first of this week. The crops are fair but would have been better if they had had rain. ADVISES EXEMPTION OF FARM HANDS St. Paul, July 30. (United Press) Exemption of farmhands for a year was ndvocated by Assistant Secretary of Agricultural Carl Vrooman, who I passed through here today on his way to Washington. "I think the farmers will see it as their duty to take new men, not of the draft age, and train them to take th places of the young men of the farms," Vrooman declared; "hut in order that they may have a chance to do this, I have favored ex emption of farmers' sons and other help on the farm for the first year." Marines Need Cooks. "Washington. July 31. (Special) Too many cooks spoil the broth they say, but Uncle Sam's Marines can't get too many cooks for their little mess overseas. Woord has gone out that the U. S. Marines need cooks. There's extra money in the job and there will probably be hundreds of applicants. Noted Ceologist Is Dead Baltimore.' TuTy 31 (Special) Dr. William Bullock Clark, noted geolog ist and professor of geology at Johns Honkins University here, died Friday at his Summer home at North Haven, Me. He was 67 years old.
