Two Simple Methods of Canning Fresh Meat Method 1. Free the meat from the bone and cut it In pieces of such a size that tbey will go Into the Jure easily. Pack the raw meat solidly into tested : clean glass Jars, filling the Jars to with in three-fourths of an Inch from the top. Sprinkle over the top of the meat half a toaspoonful of salt for each pint of meat. Add no water. Celery leaves, onion, pepper or other seusontugs may be added if desired. Adjust on the jar a new rubber of good quality. Place the cover on tho top of the Jur and ad Just, but do not fasten, tho upper wire clamp, or if a mason Jar Is used partly screw on the cover. Place the Jars on a rack in a tightly covered container, such as a wash boiler or a sap bucket in which there Is warm water that reaches to within about an inch from the tops . of the Jars. Storlllze the meat by cook- ' lng It for from four to five hours, be-' ginning to count tho time when the wa ter around tho jars reaches the boiling point. A steam cooker is particularly convenient for this purpose and a pres sure canner reduces the. sterilization period, but a wash boiler or a sap buck et answers the purpose satisfactorily. Before romovlug the cans from the sterilizer complete the sealing of each jar by adjusting the lower wire of the clamp jor' by screwing tho top tight Keep the Jars in a cool, dark place. Method 2. Sear tbo meat in a hot oven, in hot fut or in boiling water, and steam It or simmer It until It can bo torn apart. Pack the meat Into the Jars, fill the spnee with stock and add half a :teaspooiiful of salt to each pint of meat. Sterilize the meat for three hours as in method 1.
