More milk in the diet of the average American family would help cut down the high cost of living, in the city as well as in the country. Al though milk is one of the cheapest animal foods the average per capita daily consumption of milk in the entire coun try is . but one-eighth quart, whereas a full quart is none too much. At 10c a quart 10c will buy more food material in milk than in meat at 30 cents a pound or eggs at 50 cents a dozen. A quart of milk supplies approximately as much building material and energy as 3-4 pound of meat or eight average eggs. Milk combined with large quantities of vegetable food will al low a material reduction in the amount of more expensive animal foods, and should not be used merely as a beverage. A study and comparison of food and economic val ues of the common food materials is neces sary if the American housewife in these times of soaring prices is to get the best answer to the question, "How can I get the best food at the lowest cost for those de pending upon me?"
