Apple Syrup Good Way , to Utilize Cull Apples i Department of Agriculture h Furnishes Method Of Utiliz- 4 4 Waste Products of The Or- 4 chard. 4 It may not be practical for the av erage fruit farmer to moke apple syrup as a commercial proposition, but during seasons when there are a large number of culls and windfalls, o when markets are glutted, it is a matter of business economy to uti lize by-products, and the making of apple syrup for the family's use is quite worth while. The following meth od for making apple syrup is fur nished by H. C. Gore, of the bureau of chemistry of the dcDartment of aor- riculture. Wash apples, remove- all decayed and worm-eaten spots, end press out juice as usual for cider making. Be sure the juice does not ferment or "work" as only sweet cider should bo used for syrup making. The steriliz ing, reducing vat, or kettle, should be a third larger than required to hold contents. Add five- ounces of powdered cal cium carbonate to seven gallons of apple cider. Powdered calcium car bonate (carbonate of lime,) or, to give it its common name, precipitated chalk) is a low-priced, harmless chemi cal available at any drug store. Boil in kettle or vat vigorously for a per iod of five minutes. Pour the liquid into vessels, preferably glass jars or pitchers, alow to stand six or eight hours, or until perfectly clear. Pour the clear liquid into preserving kettle. Do not alow the sediment at bottom to enter. Add to the clear liquid one level tablespoonful of lime carbon ate and stir throughly. The process is completed by boiling down rapidly to a clear liquid. Use density guage or candy thermometer and bring it up to 220 degrees Fahrenheit, or, with out thermometer, reduce bulk to one seventh of original volume. To see whether it is cooked enough, test as you would syrup or candy, by pour ing a little of it into cold water. If boiled enough, it should have the con sistency of maple syrup. It should not be cooked long enough to harden like candy when tested. When the test shows that the syrup has been cooked enough, pour it into fruit jars, pitch ers, etc., and allow it to cool slowly. Slow cooling is important, as other wise the suspended matter will not settle properly and the syrup will be cloudy. A good way to insure slow cooling is to stand the vessels full of syrup in a bucket or a wash boiler of hot water. They may alBo be placed in a fireless cooker. The white sedi ment which settles out during cool ing is called "malate of lime" and is a harmless compound of lime with the natural acid of the apple. When the syrup is cooled, it should be stored in fruit jars or bottles. Place the rub ber cap or cork in position and tight en. Then place the bottles or cans of syrup in hot water and stcrirlize for 12 minutes in hot water or wash boil er outfit, 10 minutes in water seal out fit, 8 minutes in steam pressure out fit under five pounds of steam, or five minutes in aluminum pressure cooker under 15 pounds of pressure. Apple syrup made by this method is a very palatable and high-grade product. It has a flavor much like the thick syrop or jelly which is so often formed when apples are baked with a little sugar. As shown by the Govern ment experts, this apple syrup can be used in cooking with good results, as well as for table uses. S6UPB0ARD IRONING DAY MENU. TUESDAY BREAKFAST. Bartlett Pears. Beat the yolks of two eggs, add a cup ful of sugar, half the rind of a grated lemon and the Juice of a whole lemon, half a cupful of fine cracker crumbs and a pinch of salt Mix thoroughly and bake in a pie plate lined with crust. When firm add a meringue made from the whites of three or four eggs sweetened with a tablespoonful of sugar for each white and beaten thoroughly. Brown and cool. A little lemon Juice may be added to the me ringue. Nut Mince Fie.
