SimpU Nutritious Foods For Small Folks. Philadelphia Tapioca Pudding. Cover one cupful of flake tapioca with cold water ami let it stand two hours, stirring occasionally with a fork to separate the lumps. Put In a furiuu kettle with ono and one,;hnlf pints of water. Slice three tart apples and add to the tapioca, together with sugar to sweeten. Stir all together and cook until the apples are soft and the tap! oca clear. Serve hot or cold with cream. Irish Moss Hlnncniange. One quart of milk, four tablespoonfuls of Irish moss and a little salt Wash the moss In several waters and pick It over care fully. Put in a stewpan with the milk and a pinch of salt and bring to the boiling point. Then simmer a tew mo ments or until It thickens when drop ped on n cold plate. Strain and pour in a large mold or In individual molds dipped In cold water. Set in the icebox to harden and serve with cream and sugar. Marshmallow Pudding. Dissolve two toaspQonfuls granulated gelatin in one-half cupful hot water, strain, and when cool add one-fourth cupful sugar, a few drops of any flavoring desired and the unbeaten whites of two eggs. Beat all together about lifteen min utes, or until it thickens. Pour into a mold and serve with plain cream. Orange Sponge. Soak one teaspoon ful of granulated gelatin in a little cold water for fifteen or twenty min utes, then stand it over lint water until thoroughly dissolved, add one-fourth cupful sugar, one-liulf cupful orange juice. Heat the white of one egg very stiff. 1'oiir in llie orange mixture and bent all thoroughly. St;ind in a pun of ice water or in a cold plate for lifteeti or twenty miliums, then bent again. Turn Into a mold or small dish and place on Ice. Serve plain. Fruit Whip. Heat the white of ono egg until it Is dry. add one teaspoon ful of sugar and two tablespoonfuls of strained fruit jui'e. raspberries strawberries, blackberries, blueberries or pearlies can be used, also strained apple same or stewed prunes.
