must be borne in mind that when
some data on Bings and other varie
ties are available the sum in dollars
and cents will grow immensely. It
must also be remembered that the
figures just given represent the cher
rin t.rt. wiu leave or have left this
valley for all parts of the world, and
ao not include home consumption.
All b'oled cherries are preserved
in a solution of sulphuric acid, lime
and water, and are afterwards con
verted into the fancy Maraschino
cherry, used in lemonades, cocktails
and on candies.
The story of this cherry is exceed
ingly interesting, and involves many
hands and much money. The solution
robs the cherry of its color and makes
it white, the Ma'rischino process re
stores the color. In the course of six
months or a year, the same cherry
will come back to you cityfied, Euro-
peanif ied, unrecognized, save on the
grocer's bill (1 bottle Maraschino cher
ries) preferred stock, 75c; thirty-one
cherries actual count, when there are
in the neighborhood of 300 cherries in
a gallon, for which the grower receiv
ed less than 30c, when they were
plucked from the tree. -
The grower planted the tree, pruned
it (sometimes) sprayed it (less times)
and all cost money. The . picker re
ceived 4c and 5c a gallon, the farmer
3 1-2 cents, a pound. The men en
gaged in weighing and barreling, the
railroad for hauling, the labor employ
ed to unload, the nimble fingers that
pick them over, remove the pits and
stems, the "dope" they were preserv
ed in, the barrels and the red stuff
that , makes them taste like pickled
leather, the stenographers that wrote
letters about them, the managers that
laid awake nights speculating on the
condition in which the cherries would
arrive, the paper that indicated where
they were supposed to be and were
not, the cost or locating and re-weign-inc
the bottles they finally thought
they would rest in, the boxes they

The cherry has increased enormous
ly in value. Did the farmer get what
it was worth? Could he have gotten

not invested huge sums to take them
off his hands? Figure the enormous
loss in fruit itself, in time, the great
expense and the percentage of gam
wont cause any federal investigation.
However, it can be said that what
