Milk Talk No. 1. ..
(HEAP MILK OR Hiiiv :
Are you buying your milk cheap or
are you getting cheap milk? That
is the question which 'every con
sumer should consider before
buying. There are five properties
contained in milk, viz; ash, or bone
material, caseins or curd, butter
fat, sugar, and water, in nroportion
of .3 of ash, 'J.5 caseins,
4. butterfat, 6fr. sugar, 87 ,
water. Now there are li solids
and 87 water in a milk, that
is in milk containing 4 buttrfat
This ratio holds good wheather cf
a high or low test i. e. if yc-
have a milk testing 6 the otlur
solids will be increased in propor
portion, if a 1 they will decrease
in like manner. Now the solids ere
what is, or what should be cons' i
ered in buying milk, as the water
can be had for the pumping. Now
let us consider for a moment be
fore we buy wheather we are
paying a high or low price for these
solids. A 1$ milk contains 976
solids and 90.26 water, a 6 J milk
contains 16.26 solids and
83.76$ water. Now if a b
milk is worth $1.60 per quart per
month, what should a 6 sell for?
Let's see, if we pay .f 1,69 for milk
containing 9.76 . solids, at the
! same price milk containing 16.26
solids should sell for $2.60, or you
can to every '..iree quant of 6
milk add two quarts of water,
making 6 quarts of 5 'A -milk, i. e,
three quarts of 6 milk is equal
tu nve quarts of J milk, at tne
present price S quarts of Z' milk
(t $1.6u$7.60; three quarts of
bj milk (r $2.Q0.$6.00, i. a. you
are getting the same amount of
solids for $6.00 in a 6 milk that
you get in a 5 milk for $7. 60. Are
you getting your milk cheap or are
you getting cheap milk, which?
