Just over a month into 2022, Salem’s food
scene is already buzzing with activity, from
restaurant openings and reopenings to expan-
sions. Against the odds of the pandemic, here’s
the latest.
Miyoko Buffet
The highly anticipated
Japanese buffet next to El
Torito Supermarket on
Lancaster Drive North-
east is finally open. For
the past six months, own-
ers Mei Chan and Wei
Zheng were waiting to
open but had to push the
date back due to equip-
ment delays and issues
with getting set up inside.
Miyoko is Chan and
Zheng's second family af-
fair, as both have owned
— and still run — Corval-
lis' New China Buffet for
the past 17 years.
Though folks online
have expressed concern
about a buffet opening
during the pandemic,
"we've found people are
still coming out and want
to eat," Justin Yang,
Chan's son, said.
The buffet offers sushi,
Mongolian grill and some
Chinese food. It opened
Feb. 4 to a roaring recep-
tion. Lunch buffet is
$12.99 per adult, and
available 11 a.m. to 3:20
p.m. Monday through Fri-
day, dinner buffet is
$16.99 per adult and of-
fered 3:30-9:30 p.m.
Monday through Thurs-
day and on Fridays until
10 p.m. Weekend buffet is
$18.99 per adult and goes
from 11 a.m. to 10 p.m.
Seniors and children have
reduced pricing. For to-go

REOPENING
The Chubby Bean
The Chubby Bean, a
coffee and breakfast plus
Mexican food drive-thru
stand on Portland Road,
has reopened after tem-
porarily closing in Au-
gust\. The Chubby Bean
offers a full range of
espresso drinks, energy
drinks and smoothies
plus breakfast sand-
wiches, breakfast bur-
ritos and bagels.
The menu will be ex-
panding in the coming
weeks, with daily spe-
cials detailed on their
Facebook page. Operat-
ing hours are 6 a.m. to 8
p.m. daily.

The Shaka Brah
Grilled Cheese
When the Shaka
Brah food truck first
opened in 2019, grilled
cheese and shaved ice
were the staples on the
menu. Shortly after, the
Hawaiian food truck
pivoted to primarily sell
Hawaiian foods like
shoyu chicken, kalua
pig, ono short ribs,
spam musubi with
macaroni salad and
rice, along with shaved
ice.
Owner Jake Doan
said since the truck at
Divine Distillers is no
longer operating, he's
turned it into a dedicat-
ed grilled cheese and
hotdog/Polish sausage
truck. Parked at Shades
of Brew Taphouse, the
new truck will officially
open Feb. 17. For those
who still want Shaka
Brah's Hawaiian foods,
fear not — that cart is
parked to its left. Hours
for both trucks are noon
to 8 p.m. Tuesday
through Saturday. For

Mary Jane Crosby
SILVERTON - Mary
Jane Crosby died in
Silverton February 14,
2022. Her Christian
faith sustained her de-
spite a lifetime of phys-
ical suffering; Strength-
ening and enabling her
as a loving wife and
mother, a caring teach-
er, and a prayer warrior.
She was born April 25,
1951 in Buffalo, NY
daughter of Milan
and Alice MacMartin.
After Milan’s death in
1953 Alice married his
brother John MacMar-
tin, known and loved as
Dad. She is survived by
her husband Douglas
H. Crosby, their three
children Shelly (Yun),
Justin (Elizabeth), and
Jonathan (Kelsey);
four grandchildren
(Kathryn, Alric, Saw-
yer, Quinn) and two
sisters (Edith, Diane).
Doug and Mary Jane
were married July 1,
1972 in Duke center,
PA; moved to Oregon
in 1978, and have been
Silverton residents since
1984. Buried in Willa-
mette National Cem-
etery February 23, her
life will be celebrated in
a memorial gathering at
Woodburn Foursquare
Church (date to be de-
termined). Arrange-
