Skylight makes switch to Oriental By Charles Korns Emerald Contributor A four-year occupation of the EMU Skylight Refectory by Italian cuisine officially ended when authentic Oriental food was served there for the first time this term The new-born menu, developed with recipes and ad vice by Asian students, in cludes Chinese, Japanese, Singaporian and Indonesian dishes. The restaurant, which serves all of its food in take-out containers, is located above the EMU main desk. Duane Partain, EMU food ser vice director, decided to switch to Oriental to satisfy a demand and counter a negative percep tion of the Skylight. "There was a perception on the part of the University community that half of the seats were being used for study and that there was no place to sit," Partain said. Par tain explained “There's more and more demand for take-out and you can't do that with Italian." he said. But for the campus Italian food fans, lasagne and other Italian favorites will still be served once a week in the main EMU dining area A study conducted last year by a marketing class showed that a great number of Oriental students were missing the flavors of their homelands. Par tain said. "We hope that the change meets a need." he said. “If anyone has any suggestions or input, we welcome them.” he added. The transition was also devis ed with the hope of improving things financially. "The Skylight has consistently lost money year after year." Partain said. There is a misconception that the food services are sub sidized in some way, but "the money for operations comes on 1\ from the products we sell." I’artain explained Marilyn Horst man. manager of the Skylight, will team with several Asian students to prepare the new cuisine llorstman, now in her 12th year as a cook at the University, said she "got sick of Italian real quick" and appreciates the change. "Italian food is so heavy," she said llorstman said that a lot of ef fort has been made to create very authentic Oriental food, which includes egg rolls made fresh every night Better food and increased publicity should attract more customers, she said "Not many people know we exist."
