A cut from the shoulder is very nice for this recipe. The meat is sprinkled lightely with flour and placed i in a hot kettle in which an | onion has been fried. Sprinkle | the meat with seasonings and, tightly covered, cook it over a low fire until it is tender. One hour for each pound of meat is usually required. The fat in the pan makes a most delicious brown sauce. We understand what a house manager faces when it comes to planning meals.
