After studying the surplus yam
situation for years, scientists at
Oklahoma A&M think they've fi
nally hit on a solution.
If you can make potato chips
from regular potatoes, why not
fry up sweet potatoes?
Frank Gross, head of the horti
culture - department, says experi
ments show the new chips may
soon be the nibbling sensation.
They're big, golden yellow and
crisp with the sweet potato
flavor brought out.
Some of the first experimental
chips have been served this month
at field daya around Oklahoma
and a survey of those munching
the delicacy show they're enthusi
astic. '.'
"Besides being colorful - and
tasty, the chips made from' sweet
potatoes are healthier," Gross
pointed out. "They have all the
nourishment of - regular potato
chips plus vitamins."
Only a small part of the sweet
potatoes harvest can be sent to the
grocers because the majority ia
jumbo size and too big and pithy
for the table.
However, these big ones are per
fect for making sweet potato chips.
The sweet potatoes are pro
cessed for chips virtually the same

Sampson, key figure in the record
1951 waterfront strike, has bolted
the International Longshoremen's
Assn. to join the American Fed
eration of Labor.
Sampson made the move Mon
day night at a meeting of I LA
Local 791, which controls Hudson
River docks in the Chelsea district
of Manhattan.
The meting - was a turbulant
one with only 21 men lining up
behind Sampson, who had been
business agent of the local. Other
men at the meeting, variously
estimated at 400 to 900,. voted to
stay with the ILA.
It wa announced that Sampson
will serve as an organizer for the
new ILA-AFL, chartered by the
AFL after the federation ousted
the old ILA for failure to purge
itself of racketeering elements. .
