The corned Beef may be cooked in the home or, if the housewife wishes to save time, the already cooked and canned beef may be used. Corned Beef Salad Offers Tempting Change For Warm Weather Meals By Jenny Reed IT IS TRUE that our appetites change with the seasons, and naturally, our foods change with them. Here Is our old friend, corned beef, pictured in its sum mer guise. It is made into a cool and tempting jellied salad, just the thing to serve for -the lunch eon group on hot days since it not only appeals to the taste and sight, but is substantial enough to satisfy the appetite. For jellied corned beef, you may cook the corned beef your self or if you want to save time, simply use the already cooked and canned corned beef. Either may be used satisfactorily for a salad. The corned beef should be cooked ahead of time, which, on hot days, may mean in the cool of the morning. Or 'you may want to cook a good-sired piece of corned beef the day before, for dinner, with enough left 6tet for the luncheon salad, Corned beef Is cooked in a lafg quantity of water and like all othef meats is best when not Al lowed (o boil, but fathef, cooked just bel6' the boiling tempera ture1, at 1 simmering temperature. Dissolve the bouillon cubes in boiling water and pour over the soaked gelatin. Stir until dis solved. Add the seasonings and let the mixture cool. When slightly congealed, add the corned beof which has been pulled Into small pieces, and the vgetaMcs. Put in to the ring mold, and let chill thoroughly, then unmold and serve with mayonnaise. Let cool thoroughly in refrigerator. When cold, add whipped cream. Then combine pineapple, pecan meats, grapes and marshmallows and add to the first mixture. Set in refrigerator for at least two hours and chill thoroughly. Frozen Fish Loaf 2 tablespoons gelatine ' eup cold water 2 cupt tomato juice , 3 tabletpoont lemon juice 1 teetpoon talt '2 teetpoon celery salt 2 teaspoons grated onion 'a cup chopped celery 'a cup green peppers 'l cup green olivet, diced 2 minced tweet pickles . I'j cups flaked tune SOAK gelatine for 6 minute! iti cold water, and dissolve Iff one cup tomato Juice1 which has ben brought to a boiU Cool, Add the other cup of tomato Juice, lemon juice, salf, celery salt and (Stated onion, Mi thoroughly. When th mixture begins to thick en, add diced celfy, green pep pets, Olives, pickles, and tuna fish. Mix thoroughly and turd Into a wet mold, Chill in . refrigerator. Unmold onto a bed of lettuce or watercress, Garnish with mayon naise, hard cooked eggs, olives, capers and sweet gherkins, Angel Food Cake f eup egg whites I teaspoon eream of tartar l feespoon self I cup sifted eeke flour I 'a cups lifted granulated suger flespoon vanilla ' teaspoon almond ettrect Sift flour once, measure, and sift four more times. Beat egg whites and salt with flat wire whisk. When foamy, add cream of tartar and continue beating until eggs are stiff enough to hold up in peaks, but not dry. Fold in sugar carefully, 2 tablespoons at a time, until all is used. Fold in flavoring. Then sift small amount of flour over mixture and fold in carefully) continue until all Is used. Pout batter into greased angel food hafi and bake in slow oven at least 1 hour. Begin at 276 F. and after 30 minutes increase heat slightly (323 F.) and bake 80 minutes longer. Remove from oven and Invert pan for 1 hour, or until cold. Blitt Torte I 13 eups sifted cake floer I 13 teaspoons beklng powder 'l cup tugar ii cup butter 4 egg yolks, unbeaten I fablatpoont milk 4 agg whites I eup Sugar ya tup almonds, shredded SIFT flour once, measure, add baking powder, and sift to j gethet three times. Cream butter thoroughly, add sugar gradually, and cream together until light and A..A.. Add egg yolks, one at beating very thoroughly lime, after each addition. Spread in two greased 0-inch layer pans. Beat egg whites until stiff, then beat in 1 cup sugar gradually. Beat well. Spread In equal amounts en top of each layer. Sprinkle topi with almonds. Bake in slow oven (325 F.) 25 minutes, then increase heat to moderate (350 F.) and bake 30 minutes longer. Fresh Peach Ice Cream 2 cups milk 74 teaspoon talt 3 tablespoons tapioee 6 tablespoons light corn syrup 1 cup fresh ripe peach pulp 13 cup sugar 2 egg whites 1 cup whipped creem 2 tablespoons suger Add tapioca to milk in top of double boiler. Place over rapidly boiling water, bring to scalding point (allow 3 to 6 minutes), cook 6 minutes, stirring frequently. Strain hot mixture on salt and corn syrup, stirring (not rubbing) through very fine sieve: mix thor oilghly. Chill, Peel peaehesj etush with iilvet fofkj add 18 cup sugat. Add I tablespoons sugar to eg whites, beat until stiff; fold Into tapioca. Fold in crtam and peaches. Freeze rapidly 8 to 4 hours. Marmalade Rolls i tups sifted sake flour 3 teaspoons baking powder 72 teaspoon lilt 4 tablespoons butter I tgg, well beottri 4 tabletpoont milk 13 eup orange marmalade SIFT flour once, measure, add baking powder and salt, and sift again. Cut In shortening. Combine egg, milk, and marma lade; add to flour gradually and mix to a soft dough. Turn on floured board. Knead lightly t to 3 minutes, roll 14 inch thick, and cut with 2-inch floured cutter. Butter M of each circle, fold, place on well-greased pan, and brush tops with melted butter. Let rise in warm place 15 minutes. (Bake in hot oven 425 F.) 15 min utes. Brush tops with melted but ter and finish baking. Makes 18 rolls. Preserved ginger, finely cut, may be substituted for orange marmalade. Probably not, for the old "shell game," though innocent in ap pearance, Is just another magir trick and unless you know the se cret It Is impossible to "find the pea." OUR Magic trick for today is called "The Bewildering Boxes," a new and modern way of working the old three walnut shells and nea trick. EFFECT! The performet shows three ordinary safety match boxes and hands them nut for examina tion, Two of the boxes are empty, hut the third contains dnsen matches. Laying the boxes In a row on a table the magician re marks: "Even though these hnxea are closed, it Is a simple mailer for as tn tell which box contains Ihe matches. That la one reason that I objec to this terrifically red nail enamel that girla are wearing these days so often the nails it covers are not nice looking, and the hands themselves are lined and ugly. Don't draw attention to any part of your figure or dress unless it will bear a rigid inspec tion. Some day soon I'll go more deeply into what one wears to re ceptions, teas, cocktail parties and picnics.
