Most housewives know that these salads can be served moat attrac tively and make a tremendous ap pcui to tho members of the family who come home tired out after work on a hot day. The objection raised Is that a salad of this kind should be made up of three or four vcip'lablc9 and that the cooking of these vegeta bles requires a few mimes burning on the stovo for at least an hour, making tho kitchen uubearnblft. Here is a suggestion for a salad of four vegetables w hich can all be boiled together, leaving the kitchen cool and comfortable and suvmr: considerable fuel. Scrape and cut up pome young carrots, prepare some string beans I in about two inch lengths, and sholl some fresh lima beans and peas. Place all in an enameled ware snucepnn. cover with cold water and add salt. When finish t?d, pour Into an enameled ware colander to drain and cool. If enameled wure is used there will be no danger of the vegetables bo coming discolored. Cover a platter with lettuce Icavps and place the heart in the center. When the vegetables are cold, distribute them on top of the lettuce. If you have any cold left over potatoes, they can be diced ond added to the salad. Garnish with a few sliced hard-tmHvd eggs, celery, radishes and olives. This will make an elaborate-looking but simply prepared meal. For best results the cotfee should be freshly ground. Surprising as it will be to most. Professor Pres ent t says that the coffee should not be more than two minutes in water of from 1K5 to 21)3 degrees Fahren heiL At these trnterutures most of the caffeine will be dissolved,, says Professor Prescott, the flavor giving oils will not be boiled away, and the bitter and woody taste will not be developed as much as by boiling.
