I thought it had already retired a week ago, but alas, one more funny milk-bottle shaped fruit has appeared. And it’s big enough for one more round of my favorite way to eat zucchini—zucchini relish. The following recipe is taken from the 1977 edition of You Can Can with Honey by Nancy Cosper. A new edition of this wonderful little booklet can be found at Honey Heaven. 128 E. 11th, Eugene. Zucchini Relish Grind. Let stand overnight: 7 cups ground or grated zucchini 31/2 cups chopped onion 5 T. salt Drain and rinse in cold water. Mix together: 13/4 cups vinegar i 1 cup honey 2 tsp. nutmeg 1 T. dry mustard 1 green pepper, ground (jalapeno if you like it hot) 1 red pepper. minced 1/2 tsp. black pepper (or cayenne) 14/2 tsp. celery seed Bring these ingredients to a boil. Add zucchini mixture. Simmer, stirring fre quently. Pack in hot sterile jars. 5 pints.
