Then pour over slices of but tered bread and bako lu moderate oven, following method of baking custard. What "a simple dessert Is a baked custard! It Is a favorite with almost every person when baked until Arm, with no Indications of wntcrluess. And yct possibly becauso it Is so sim ple, It very often appears more like curds and whey than the article which the name Implies. The secret of success Is lu the meth od of cooking. The oven should be moderate, only hot cuough to brown a piece of white pnK?r lu twenty min utes, nnd the dish containing tho cus tard should be set In n pan of hot wa ter on several folds of paper to equal ize tho temperaturo nnd prevent the custnrd boiling. Baked Custard. Four cups of scalded milk, flvo eggs. one-half cup of sugar, one-qunrtcr tea spoonful of salt and n little grated nut meg. Heat eggs, add sugar nnd salt and pour on slowly tho scalded milk, Pour Into buttered baking dish or Into Individual buttered baking cups, sprin klo with nutmeg, set In a pan of hot water and bake lu a slow oven until custard Is llrm. Remove from pan containing hot wnter aud set In cold. 8tews and Soups. A fow pounds of tho clod or forearm aro oxcollcnt for a stew. Cut tho meat Into small pieces for serving. Plunge Into rapidly boiling wnter, set the ket tle over tho simmering burner or a very low tiro whero It will not boll again aud cook slowly until meat is tender. Salt and pepper may bo added after the meat has been seared, aud as tho water bolls away more should be added. Meat li thus cooked lu a small inmiitlty of water, and some of the Julco and llavor aro In the liquid. Meat Is boiled lu 11 large quantity of water by plunging tho piece Into the boiling water nud allowing It to boll threo or four minutes, This closes the cut mus cles, hardens the outside and keeps the Juices in tho meat. in making soup the method Is exact ly opposite. Tho meat Is cut luto tminll pieces a shank or shin Is best for soupmnklng put Into cold water nud salt added at onco. This will draw out (ho Juices of the meat Into the liquid.
