A New Butter Theory, It is a common notion that salt preserves butter. Recent experi ments have demonstrated that but very littlo of the butter contains any salt. The salt does not pene trate the butter as it does meat, -but simply attaches itself to tho exterior, and or courso it must come in contact "with all of the butter to do this. Prof. Arnold finds that such is not tho case, but a considerable portion of it is moro or less mingled, not mixed through the butter in its original state, or in the form of still smaller crystals, and in an undissolved state. ' This does not look like preserving the butter, for to preserve it the salt must be incorporated with it. The salt will absorb the water in the butter and form a brine, and this brine can coat over the pajgicles of the butter with which It comes in contact, and no more. This ceating: must be on Lthe outside leaving the inside just as it was oeiore, without any sait. Temperature has more to do with preserving butter than salt, and the place where it is kept (the sur roundings) is more of a factor for its weal or woe than salt. The dairyman who expects the salt in the butter to keep it all right and disregards the other things, will fiud his butter "off." The truth is, the salt is of the least possible consequence so far as preservation is concerned. It is only a matter of taste. If the salt is put in it will taste of it, and an ounce to a pound is the common rule that is, about whatthe public palate re quires, although a half ounce is about all -which a well-worked pound of butter will dissolve. The rest is therp in the original form, and gives to the butter the salty taste desired. Working but ter with brine is all the salting it requires, according to Prof. Ar nold, and when well worked it is ready to pack at once, or to ship to market. All of the old, tire some elbow work which has made the dairy such a drudgery for all time is entirely unnecessary. Ex cept the mere packing, tho old dash-churn should go, too, as it has no cheer in it, and it is alto together too unhandy for the pres ent age.
