C, Sept. IS Thoro has been In the past much Indifference on the part of eonsuin era with respect to the cleanliness of milk; too many of them desire to buy milk at n loV-ptde,e nnd do not give any consideration to quali ty. Dirty tnllk may prove expen sive as a gift, while clean milk may j be economical oven at a hlh price; J the cheapest artlclo Is often the most expensive. Tlio higher prlco for clean milk may ho cheap Insnnuieo against some form of sickness. A rceon t Farmers' ltullotlu of Agriculture has outlined the ninlii factors that should go to favor tho production of clean, safe milk. Those Includo clean, healthy cows kept In light, woll-ventllntcd stables ttiat I may bo easily cleaned; a woll-drnln- i ed barnyard; thoroughly ntorillxcil utensils, and healthy milkers that milk with dry hands; n small top milking pall; a soparato house for handling the milk; an abundant sup ply of pure water of tho tempera- ture at which tho milk Is kupt Is also an Important feature, ns bac teria multiply rapidly when tempera ture Is nbouo HO V. The milk should bo cooled Immediately nftc rmllk prlco ns dirty milk which endangers tho health of toho family. A nioro Bci-lona" consideration Is tlio marked Increase) In the c6st of pro duction which has resulted In recent years from food nnd labor problems. This Incroaso Is In keeping with the Increase In tho cost of almost evorv commodity, and the consumer must expect to pay his portion of any le gitimate Increase In the cost of pro duction occasioned by these condi tions. On the other hand thoro is need of nioro attention to better mnnago ment on the nvornge farm devoted to t:;o production of milk. Tho amount of milk produced per cow Is frequently so low ns to reflect seriously upon tho business ability of the owner. A producer who makes no systematic offort to loworl the cost of production by Increas ing tho nvorago production or milk Per cow, Is entitle:!, to little sympa thy If he finds the business unprofi table. The profltH yielded bya good cow often go ta offset losses caused by poor cows In tho samo stable. Tho hooping of records of produc- l tlou of each Individual In tho herd. n Ing, to TiOoP, or lower, nnd stored, T the elimination of unprofitable until delivered, at n low temperature IncreiiNlug: Demand of Consumers for Clean Milk. An Increasing demand for good, clean milk among constituent Is n gratifying indication Hint thero Is a more general rcllzatlon of the Impor tance of this item. This dtfinnnd has resulted In nioro stringent regula tions concerning the sanitary condi tions associated with the milk sup ply. Compliance with thoso sani tary rules requires additional care, attention, and extra exponso on the part of tho producer of tho milk, and while this expense may not bo large, It Is only fair that the constiinor should pay his share of tho cost of Improving tho quality of the milk. Tho consumer can not report to pur chase clean, safe milk at tho samo cows, tlio Improvement of the herd through selection of tho best pro ducers nnd bleeding them to a bull of dairy merit, and. tho selection of the best heifers from such breeding are necessary to put inulk production on n sound basis. Unless the producer does thoso things ho disregards the fundamen tal prlnclpnln of business economy, nnd It Is unreasonable for such a man to expect the constiinor to pay him a profit on business practices which roprosont such economic waste. Thero Is no good excuse for slack business mothods on tho dairy farm. Directions for keeping records of milk ylolds and' cost of production are furnished by ovory Stato ngrl cultural colloge am! by the t'nlted Stntes Department of Agriculture.
