It is stated that Kentucky has, in I the last six months, sold over $295,- 000 worth of thoroughbred trotters. A pail of milk standing ten min utes .where it is exposed to the scent of a strong smelling stable, or any other offensive odor, will imbibe a taint that will never leave it. Long Lived Horse. Whpn prop erly eared for and not abused, horses will live to a remarkable age. A case has been called to our notice of a horse of J. Lee Garrison, of Greene county, Pa., which died last spring at the age of 39 years. His death i was produced by accident, and had he not met with the mishap it is probable he would have survived several years longer. It is a notice able fact that well-bred horses are most given to longevity. It is said that a German agricul turist, after 25 year's experience, con trary to the general belief that the largei varieties of Merino are to be preferred on account of their yield ing a better return both in flesh and wool for the fodder consumed, de- clares the reverse to be true as the build of the sheep has a greater in flence on the fatteniug properties tha-n the absolute size, and larger quantities of wool are obtainad from small sheep in relat'on to a given weight than in the larger kinds, the relative increase amounting to Irom 20 to 30 per cent. 19-27 m Texas Stock Raisers, the Financial kings of the Future. The cattle interest of Texas is one of such vast magnitude and import ance that it is attracting the atten tion not only of all the United States but of the entire civilized world. And the eyes of eastern capitalist who are seeking investments for their money are being directed to the Lone Star State. Texas being in the great grazing belt, her boundless prairies, offer more and better inducements for the investment of money in both cattle and laud than any other country known to the human race. She has all the requisites necessary for small as well as large investments of capit al combining climate, water and sev eral varieties of grass, with millions of acres of land where the sod is still unbroken. The lands can be had in most any quantity and generally sell at$l 00 to $2 50 per acre. There is also an abundance of cheap labor, especially adapted to the handling of stock. These inducements of which we write are known to every one at all acquainted with the oattle business in the state, and it is unnec essary for us to mention them, but we will say that numerous in stances can be cited where men of pluck and energy with moderate means, at the beginning have in a few years, by outside influence, amassed over whelming fortunes. Then think what men of ample capital might accomplish with or dinary care and business skill, such as they would give to any other branch of trade. The cattle business of Texas is being conducted as sys tematically, as honorably and with as much gentility, as any other lino of business in the government. All over the broad west the visitor will find among the cattle raisers of Tex as as many men of integrity, honor and education as in any other pur suits. Comparing the stock men of Texas with those engaged hi differ ent trades, occupations or professions, they rise superior to the ordinary man of business. The stockman's word is his bond; his credit is first class at home and abroad; his ac count is solicited by the banker; and his trade-sought after by the mer chants. Why is this? Simply because the profit in his cattle transaction is a certainty. It seems that nature has arranged affairs in this western part of Texas for the special benefit of the stockman. The cattle grow and multiply night and day. When oth er industries are asleep, this still marches on, and our only definition of the wonderful profits occruiug to all engaged in it is this, that it is a never ceasing, ever increasing eternal compound. Seldom does the annual profits on cattle raising fall short of 30 per cent., and where the range is exceedingly good, combined with skillful, prudent and economical management, and immediate re-investment of all sales of beef, after de ducting expenses, into younger cat tle, we have known of more fabulous profits being secured. In- connection therewith we can safely say to all who contemplate the investment of capital in this vast enterprise that there is no danger whatever, either pecuniarily or phys ically. The men noted for their bluster 'and bray have gone, and there is no more orderly, quiet set of gentlemen in any portion of God's heritage than the catilemen of Texas. The railroad facilities are such that the Texas stockmen can posess all the comforts of homes here as well as in the older states. Many of the ranchmen own elegant, homes in some city several hundred nvles distant from their herds, where they enjoy all the pleasures of family association without the hardships of eamp life. While it is true that we have a great many men engaged in cattle raising in the west, still there is plenty of room for as many more, who will come with means and energy to in vest and win the triumphs that have so signally crowned the lives of those heretofore, but how long these op portunities will remain open to the general public is a very grave ques tion and one we shall not undertake to solve and we can only add as our prophecy, that Texas is destined in the future to be the home of the wealthiest and most influential cat tlemen of the world. Texas lAoe Stock Journal. THE HOUSEHOLD. Baked Indian Meal Pudding. Into 1 quart of boiling milk stir 1 teacupful of fine sifted Indian meal, add one.quarr of cold milk, 3 well beaten eggs, cup of sugar, a small teapoonful of salt, a piece 'of butter as large as a small hen egg. Flavor with nutmeg or common spice; turn into a buttered pudding dish and bake two hours. Serve with butter. Bi'TTErc to Keep in Summer. A simple mode ofVkeeping butter in warm weather, where ice is not handy, is to invert a common flower pot over lhe6otter, with some water in thfi dish in which the butter is laid. The orifice in the bottom may be corked or not. The porousness of the earthen ware will keep the but ter cool. It will be still cooler if the pot be wrapped with a" wet cloth. Not the porosity of the earthenware, but the rapid abstraction of heat by external evaporation causes the but ter to become hard. I wish to send to the ladies through the Household a receipt for green tomato catsup, which I think far sur passes the catsup made of ripe to matoes. Take green tomatoes, white head cabbage, green peppers and onions, (yon can judge yourself as to the amount) prepare them and grind them through a "Sausage grinder," having your mil! on a ta ble so that the water from your veg etables will run off (as it is pliable to spoil your catsup). Then add black pepper, salt and mustard (if you like) put in a jar, pour some good strong vinegar, say a pint, boiling hot, weight doivn well, and in a few days you will see the fruit of your labor, I hope the ladies will try it as it is excellent. Lilla D. Peaches to Can. Pare and halve your peaches. Pack them as closely as possible in the can without any sugar. When the can is full, pour in sufficient pure cold water to fill all ttre interstices between the peach es, and reach the brim of the can. Let stand long enough for the water to soak into all the crevices say six hours then pour in water to replace what has sunk away. Seal up the can, and all is done. Canned in this way, peaches retain all their freshness and flavor. There will not be enough water in them to render them insipid. It preferred, a cold syrup could be used instead of pure water, but the peaches taste more natural without any sweet. Spiced Beef. Take the bones out of a 6 pound salt flank of beef, and slit the meat iuto a long thin piece; sprinkle with a piece of each of ths following Bpices mixed togeth er: Mace, nutmeg, ginger, pepper, allspice, and a handful of chopped parsley; roll it up tightly, and place in a cloth closely tied; put into a stew-pan; and 1 small onion, 1 car rot, a piece of celery and a small bunch of sweet herbs. Cover with cold water, let boil and simmer gent ly Ave hours; when cooked tie the cloth up tighter and press between two boards; let it get cold. This can be served either plain or glazed. Good Coffee. The rule for good coffee is two ounces of coffee to a quart of water making about five cups. Old government Java is com monly considered the best kind; a mixture of Java and Rio the most serviceable. Rio coffee is the cheap est, strongest and by many preferred to the other kinds. French dripped coffee is never boiled, but boiling water is poured over the coarse ground coffee in a perforated vessel set in the top of the coffee-pot. Double the quantity of coffee is re quired to make it that way. French dripped coffee has no pggs or other articles added to clear it, neither has Turkish coffee. They are not necces sary. If let alone I use no eggs for such a purpose, but, the custom to the contrary is prevalent, and it is not worth contending against. Have the coffee fresh roasted and fresh ground, pour cold water to it in a bowl just enough to wet it, put it in the white of an egg and stir up then pour it into hot water in the coffee pot. When it has boiled a minute take it off" and either pour the whole contents into the strainer in the urn or else put in half a cup of cold wa ter and let it settle in the pot.
