to the fact that the eareaeses of slaugh
tered beeves are not preserved in their
entirety, and net until the viscera and
entrails have beea rmovd. Poultry,
game and Ash, although preserved In
ice, will undergo a slow putrefaction
change; the muscular part of tho ani
mal gradually becomes soaked with
toxic substance. If the animal la taken
out of eeld storage very few moments
suffice for a rapid absorption of texini
by the muscular pari of tho poultry or
fish, as tho cam may be. A law should
